Creamy Tuscan Chicken Pasta

An actual 25 minute meal, that's packing plenty of flavour, perfect for Valentine's Day.

Ingredients

  • 200 g dried pasta
  • 1 chicken breast cut lengthwise in half
  • 1 red onion medium dice
  • 4 cloves of garlic minced
  • 1 red pepper medium dice
  • 5 sundried tomatoes minced
  • 1 tablespoon tomato paste
  • 1 cup chicken stock
  • 150 ml heavy cream
  • 10 cherry tomatoes halved
  • 1 cup parmesan finely grated
  • 100 g spinach washed
  • 1 tsp paprika
  • 1 tsp oregano
  • 1 tsp onion powder
  • 1 tsp olive oil
  • Salt to taste

Method

  • To a non-stick pan on medium heat add the oil, followed by the chicken breast, flip when cooked on one side and remove once browned
  • Add onion and garlic and let simmer. Meanwhile add pasta to pot of salted boiling water
  • Add capsicum, sun-dried tomatoes, tomato paste, chicken stock, heavy cream and tomatoes. Let simmer before adding spices.
  • Wash and add spinach to the pan, followed by the chicken breast, and let simmer until cooked.
  • Add pasta to pan and let cook for a few more minutes before plating up
