Creamy Tuscan Chicken Pasta

An actual 25 minute meal, that's packing plenty of flavour, perfect for Valentine's Day.
Ingredients
- 200 g dried pasta
- 1 chicken breast cut lengthwise in half
- 1 red onion medium dice
- 4 cloves of garlic minced
- 1 red pepper medium dice
- 5 sundried tomatoes minced
- 1 tablespoon tomato paste
- 1 cup chicken stock
- 150 ml heavy cream
- 10 cherry tomatoes halved
- 1 cup parmesan finely grated
- 100 g spinach washed
- 1 tsp paprika
- 1 tsp oregano
- 1 tsp onion powder
- 1 tsp olive oil
- Salt to taste
Method
- To a non-stick pan on medium heat add the oil, followed by the chicken breast, flip when cooked on one side and remove once browned
- Add onion and garlic and let simmer. Meanwhile add pasta to pot of salted boiling water
- Add capsicum, sun-dried tomatoes, tomato paste, chicken stock, heavy cream and tomatoes. Let simmer before adding spices.
- Wash and add spinach to the pan, followed by the chicken breast, and let simmer until cooked.
- Add pasta to pan and let cook for a few more minutes before plating up
