Sesame Crusted Eggs with Melting Mozzarella

Toasted sesame and black sesame form a crunchy base in the pan. Melted mozzarella creates a golden ring around the edges, and butter in the centre makes space for two eggs to cook gently. Season, cover briefly, then fold the sesame-cheese crust over the eggs. Serve hot with fresh bread.
Ingredients
- 3 tbsp sesame seeds
- 3 tbsp black sesame seeds
- 60 g mozzarella grated
- 1 tbsp butter
- 2 eggs
- Salt
Method
- Heat a pan over medium. Add both sesame seeds and toast 4–5 minutes, stirring, until nutty and golden.
- Push the toasted sesame to the edges of the pan to form a circular ring.
- Sprinkle the mozzarella over the sesame. Let it melt and fuse slightly.
- Add the butter to the centre. Once melted, crack in the eggs.
- Add a pinch of salt. Cover and cook about 1 minute, or until the eggs are close to your preferred doneness.
- Fold the sesame–cheese edges inward around the eggs, just like in the video.
- Eat immediately with warm, fresh bread.
